Irresistible strawberry-chocolate chip muffins with chocolate streusel topping.
Ingredients:
  • 0.5 cup all-purpose flour
  • 3 tablespoons firmly packed brown sugar
  • 3 tablespoons white sugar
  • 3 tablespoons unsweetened cocoa powder
  • 0.125 teaspoon salt
  • 5 tablespoons unsalted butter, melted and cooled slightly
  • 0.5 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 2 cups fresh strawberries, hulled and roughly chopped
  • 0.75 cup miniature semisweet chocolate chips
  • 1 cup white sugar
  • 1 large egg
  • 4 tablespoons unsalted butter, melted and cooled
  • 1 cup buttermilk, at room temperature
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare 18 muffin cups by greasing them or lining with paper liners.
  • In a bowl, mix together flour, brown sugar, white sugar, cocoa powder, and salt until well combined for the streusel topping. Add melted butter and vanilla and mix until mixture resembles wet sand. Set aside.
  • In a large bowl, combine the flour, baking powder, and salt. Add strawberries and chocolate chips, and mix until evenly incorporated throughout the flour mixture.
  • In a bowl, whisk together sugar, egg, and melted butter until fully combined. Mix in buttermilk and vanilla extract until well incorporated. Gently fold in the buttermilk mixture into the flour mixture until no dry clumps of flour remain. Be careful not to overmix.
  • Dollop batter into muffin cups and generously sprinkle each with 1 to 1 1/2 tablespoons of streusel topping.
  • Bake the muffins in the preheated oven until golden around the edges and the tops spring back lightly when touched, for 22 to 27 minutes. Let the muffins cool in the pan for 10 to 15 minutes before gently moving them to a wire rack to cool completely.
