Strawberry cream cups

Indulge in creamy-filled biscuit cups for an irresistible appetizer or dessert.
Ingredients:
  • 6.00 gm gelatine
  • 600ml thickened cream
  • 107.50 gm caster sugar
  • 8.80 gm vanilla extract
  • 125.00 ml Greek Style Yoghurt
  • 375g strawberries, hulled, chopped
  • 100g chocolate-coated honeycomb, roughly chopped
  • 12 sweet plain biscuits
Instructions:
  • Combine the gelatine and 1/4 cup of cold water in a heatproof, microwave-safe cup, using a fork. Microwave the mixture, uncovered, on HIGH (100%) for 30 seconds or until it becomes clear. Give it a stir with the fork and then let it cool for 10 minutes.
  • Whip cream until soft peaks form, then mix in sugar, vanilla, and yoghurt until smooth. Fold in room temperature gelatine until fully incorporated.
  • Gently combine half of the strawberries with the cream mixture. Spoon the mixture into twelve 1-cup plastic cups, filling each halfway. Garnish with honeycomb and the remaining strawberries. Arrange on a tray, cover, and refrigerate for 3 hours.
  • Place a biscuit on top of each dish. Serve and enjoy!
