Indulgent cupcakes bursting with berries and creamy cheese filling.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 2/3 cup water
  • 1/2 cup sour cream
  • 1/3 cup vegetable oil
  • 2 eggs
  • 3 tablespoons strawberry preserves
  • 1 package (3 oz) cream cheese, cut into 24 pieces
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Cream Cheese Frosting
  • Sliced fresh small strawberries, if desired
Instructions:
  • Preheat the oven to 350°F (or 325°F for a dark or nonstick pan) and line 24 muffin cups with paper baking cups. In a large bowl, combine cake mix, water, sour cream, oil, and eggs until a thick batter forms. Divide the batter evenly among the muffin cups.
  • Combine preserves in a small bowl until smooth. Top each cupcake with 1 piece of cream cheese, gently pressing it into the batter. Spoon 1/4 teaspoon of preserves on top of the cream cheese in each cupcake.
  • Bake for 20-25 minutes until the tops are golden brown and spring back when gently touched in the center. Some preserves may show on top of the cupcakes. Allow to cool for 10 minutes in the pans before transferring to a cooling rack. Let them cool completely for about 30 minutes.
  • Cover each cupcake with a smooth layer of frosting. Garnish with fresh strawberry slices right before serving. Keep refrigerated in a covered container until ready to enjoy.
