Strawberry Cream Parfaits with Coconut Macaroons

Delicious parfaits made with orange cream, coconut macaroons, and fresh strawberries.
Ingredients:
  • 1 quart strawberries, hulled and sliced
  • 7.5 tablespoons sugar
  • 1.5 cups heavy whipping cream
  • 0.75 teaspoon finely grated orange zest
  • 8 ounces crumbled store-bought coconut macaroons
Instructions:
  • Combine fresh, ripe strawberries with 6 tablespoons of sugar in a bowl and allow them to sit until the berries naturally release their juices, which will take about 30 to 60 minutes.
  • Whip cream with orange zest until soft peaks form, gradually incorporating the remaining 1 1/2 Tbs. sugar.
  • Drizzle 6 tablespoons of fresh strawberry juice over the crumbled macaroons and gently mix until well coated.
  • Prepare six elegant goblets that can hold a minimum of 12 ounces each. Layer each goblet with the following exquisite ingredients: start with a scant 1/4 cup of macaroons, followed by a lavish layer of whipped cream, and top it off with a generous 1/4 cup of succulent strawberries. Chill in the refrigerator until it's time to impress, for up to 2 hours.
