Strawberry Creme Brulee Pie

Decadent custard pie with creamy filling, sweet strawberries, and caramelized sugar topping.
Ingredients:
  • 12 large strawberries, hulled and halved
  • 0.33333334326744 cup brown sugar
  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 0.25 teaspoon salt
  • 2 tablespoons milk
  • 1 pint heavy whipping cream
  • 6 egg yolks
  • 0.25 cup white sugar
Instructions:
  • Combine juicy ripe strawberries with the rich sweetness of brown sugar in a bowl, allowing the flavors to mingle while you move on to the next steps, for about 30 minutes.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Combine flour, 1 tablespoon white sugar, and 1/4 teaspoon salt in a bowl and whisk until well mixed. Add butter and mix until the mixture resembles coarse crumbs. Slowly pour in milk and mix until the dough comes together. Transfer dough to a floured surface and roll out into a 10-inch circle. Place the dough in a 9-inch pie dish, poke the bottom and sides with a fork, and fill with dry beans or pie weights.
  • Place the crust in the oven heated to perfection and bake until beautifully golden for approximately 25 minutes. Once done, allow the crust to cool down.
  • Gently warm cream in a saucepan. In a bowl, whisk egg yolks with salt. Gradually add hot cream to yolks while whisking. Pour yolk mixture back into the saucepan. Cook, stirring constantly until thickened, about 5 minutes. Avoid boiling. Let custard cool to room temperature for about 30 minutes.
  • Remove the juice from the strawberries and arrange them at the bottom of the pie shell. Top with cream custard and chill until firm, approximately 4 hours.
  • Position the oven rack 6 inches below the broiler and preheat it.
  • Evenly sprinkle 1/4 cup of white sugar over the top of the pie. Broil until the sugar is browned, approximately 5 minutes. Allow the pie to stand for 5 minutes for the sugar topping to cool before serving.
