Whip up this quick and delicious fresh strawberry freezer jam. Perfect on toast, ice cream, or in milkshakes.
Ingredients:
  • 2 cups crushed fresh strawberries
  • 4 cups sugar
  • 1 (1.75 ounce) package dry pectin
  • 0.75 cup water
Instructions:
  • Smash strawberries with a potato masher in a large bowl. Optionally, finely chop strawberries in a food processor without pureeing. Strain strawberries through a fine mesh strainer, saving the juice for later.
  • In a large bowl, combine 2 cups of crushed strawberries, saving any extra for later use. Mix in sugar until well blended. Allow to sit at room temperature for 10 minutes, stirring occasionally.
  • In a small saucepan, combine pectin and water, stirring until well mixed. Bring to a boil over medium-high heat and continue boiling, stirring constantly, until a thick paste forms and the pectin is completely dissolved, approximately 2 minutes.
  • Pour the boiling pectin-water mixture into the strawberry mixture in a large bowl, stirring constantly for 3 minutes. Test the jam's consistency by coating the back of a spoon with jam and running a finger through it. If the jam stays separated, it is set perfectly. If it runs back together, continue stirring for an additional 3 minutes until it sets.
  • Transfer the mixture into two sterilized pint-size jars or containers, making sure to leave 1/2 inch of space at the top for expansion. Seal the containers and let them sit at room temperature for 24 hours. Refrigerate for a minimum of 1 hour before serving, or store in the freezer for up to 3 months.
