Try a refreshing strawberry and orange galette for a taste of spring, perfect with creamy low-fat vanilla yogurt.
Ingredients:
  • 4.40 gm vanilla extract
  • 225g plain flour
  • 24.00 gm icing sugar mixture
  • Pinch of salt
  • 500g strawberries, halved or quartered if large
  • 21.00 gm orange juice
  • 2 tsp finely grated orange rind
  • 14.40 gm honey
  • 20.00 ml pistachios, chopped
  • Orange zest, to serve
  • Reduced-fat vanilla yoghurt, to serve
Instructions:
  • In a large bowl, sift together the flour, icing sugar, and salt. Create a well in the center and add the oil and vanilla. Use a fork and your fingertips to mix until the mixture is crumbly. Pour in ⅓ cup (80ml) cold water and stir with a round-bladed knife until clumps form. Shape the dough into a 3cm thick disc, being careful not to overwork it. Wrap the dough in plastic wrap and refrigerate for 30 minutes before using.
  • Preheat your oven to 200°C. In a large bowl, mix together the strawberries, orange juice, orange rind, and honey. Roll out the pastry on a sheet of baking paper into a 30cm disc. Spread the strawberry mixture in the middle of the pastry, ensuring a 5cm border. Carefully fold the pastry over the strawberries, pleating as you fold. Transfer the galette, still on the paper, onto a baking tray.
  • Bake for 30 minutes until lightly golden. Brush the strawberry mixture with tray juices, then transfer the galette to a serving plate. Sprinkle with pistachios and orange zest before serving warm with vanilla yogurt.
