Elevate breakfast with strawberry Greek yogurt pancakes, bursting with flavor and topped with fresh strawberries.
Ingredients:
  • 2 containers (5.3 oz each) strawberry Greek yogurt
  • 3/4 cup milk
  • 2 eggs
  • 2 cups Bisquick™ Original pancake and baking mix
  • 1 1/2 cups sliced strawberries
  • Strawberry syrup, if desired
Instructions:
  • Preheat a nonstick griddle or skillet over medium-low heat and lightly brush with vegetable oil, if needed. In a medium bowl, combine 1 container of yogurt, milk, eggs, and Bisquick™ mix until well blended. If the batter is too thick, stir in an extra 1 to 2 tablespoons of milk to reach desired consistency.
  • Pour a touch under 1/4 cup of batter for each pancake onto the hot griddle, spreading it into a 4-inch circle. Cook until the edges start to dry and bubbles appear on top. Flip and cook the other side until golden brown. Serve 2 pancakes topped with a dollop of yogurt, 4 tablespoons of sliced strawberries, and strawberry syrup.
