Refreshing strawberry guacamole with ripe avocado chunks and sweet-tart strawberry bursts.
Ingredients:
  • 2 ripe avocados, peeled and seeded (see How to Cut and Peel an Avocado )
  • 1/2 teaspoon salt
  • 1 tablespoon lime or lemon juice
  • 1/4 cup minced red onion
  • 1 cup chopped cored strawberries
  • 1/4 cup chopped sweetened dried cranberries (omit for paleo version)
  • 2 tablespoon chopped cilantro (optional)
Instructions:
  • Mash the avocados until slightly chunky: Use a fork to gently mash up 2 avocados. Ensure the guacamole retains some texture by not over-mixing.
  • Combine lime juice and salt in a large bowl. Add red onion, chopped dried cranberries, most of the strawberries, and cilantro. Keep a handful of chopped strawberries for garnish.
  • Taste and adjust the salt and lime juice to your liking for the perfect balance of creaminess from the avocado, acidity from the lime, and saltiness.
  • Garnish with more strawberries: Sprinkle the remaining chopped strawberries on top. Serve with tortilla chips. When storing, cover the guacamole with plastic wrap, ensuring no air touches it, and chill until ready to serve.
