Delicious strawberry lemon bars with a zesty lemon crust - a new family favorite treat!
Ingredients:
  • 2 cups all-purpose flour
  • 0.25 cup powdered sugar
  • 2 tablespoons cornstarch
  • 2 teaspoons lemon zest
  • 0.125 teaspoon salt
  • 0.25 cup unsalted butter, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 cup chopped fresh strawberries
  • 1.3333333730698 cups white sugar
  • 0.33333334326744 cup all-purpose flour
  • 0.25 cup lemon juice
  • 4 large eggs
  • 2 tablespoons powdered sugar
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect bake.
  • In a food processor, blend flour, powdered sugar, cornstarch, lemon zest, and salt for the crust. Add butter and oil; pulse until mixture is crumbly. Press into an 8-inch square baking dish.
  • Bake until beautifully golden brown in the preheated oven for about 20 minutes.
  • Once the crust is baking, blend the berries in a food processor until smooth. Strain the mixture to remove seeds, then mix the berry puree in a bowl with white sugar, flour, lemon juice, eggs, and salt. Whisk until well combined.
  • Take out the golden crust from the oven and swiftly pour the delectable filling mixture over it. Place it back in the oven and bake until the filling is perfectly set, approximately 20 minutes.
  • Once out of the oven, let it cool on a wire rack for 30 minutes, then chill in the refrigerator for 2 hours. Finish by dusting with powdered sugar and cutting into 16 bars.
