Delightful dessert bars with buttery shortbread, Gold Medal® flour, sweet strawberry preserves, and lemony cream cheese filling.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1/2 cup powdered sugar
  • 3/4 teaspoon grated lemon peel
  • 3/4 cup cold butter
  • 2 packages (8 oz each) cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tablespoon fresh lemon juice
  • 1 cup strawberry preserves
  • Sweetened whipped cream, if desired
  • Fresh strawberry slices, if desired
Instructions:
  • Preheat the oven to 350°F and grease a 13x9-inch pan. Combine flour, powdered sugar, and 1/2 teaspoon of lemon peel in a bowl. Use a pastry blender to cut in the butter until the mixture is crumbly. Press the mixture into the bottom of the pan and bake for 20 to 22 minutes until light brown. In a separate bowl, mix cream cheese and granulated sugar with an electric mixer until smooth. Add eggs one at a time, then mix in lemon juice and the remaining 1/4 teaspoon of lemon peel. Spread preserves over the baked shortbread, then pour the cream cheese mixture over the preserves, spreading it to the edges.
  • Bake for 28-32 minutes until firm. Allow to cool in pan on a rack for 1 hour, then refrigerate for 4-8 hours. Cut into 8x6 rows, garnish with whipped cream and strawberries, and store any leftovers covered in the refrigerator.
