Vibrant strawberry poke cake with zesty lemon flavor, perfect for impressing a crowd with bold, refreshing tastes!
Ingredients:
  • 1 (15.25 ounce) package lemon cake mix (such as Duncan Hines® Lemon Supreme)
  • 2 cups water, divided
  • 3 large eggs
  • 0.33333334326744 cup vegetable oil
  • 1 lemon, zested and juiced
  • 1 (3 ounce) package strawberry-flavored gelatin mix (such as Jell-O®)
  • 0.25 cup cold water
  • 1 (3.4 ounce) package instant lemon pudding mix
  • 1 (8 ounce) container frozen whipped topping (Cool Whip®), thawed
  • whole or sliced strawberries
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 9x13-inch baking dish with cooking spray.
  • In a large bowl, use an electric mixer to blend cake mix, 1 cup of water, eggs, oil, lemon zest, and lemon juice on low speed until just combined. Increase speed to medium and beat for 2 minutes. Transfer batter to the baking dish.
  • Bake in the preheated oven for 21 to 26 minutes until a toothpick inserted in the center comes out clean. Poke holes in the cake using a fork or chopstick and set aside.
  • In a small saucepan, bring 1 cup of water to a boil. Add strawberry gelatin mix and stir until dissolved. Mix in 1/4 cup of cold water. Pour this mixture over the cake and refrigerate until completely cool, for at least 1 hour.
  • Create the topping by whisking milk and lemon pudding mix until slightly thickened, then gently fold in the whipped topping.
  • Spread the topping over the cooled cake, chill in the refrigerator. Decorate with whole or sliced strawberries just before serving.
