Elevate your fundraiser with irresistible strawberry macaroon drops.
Ingredients:
  • 4 egg whites
  • 215.00 gm caster sugar
  • 8.80 gm vanilla extract
  • 82.50 ml plain flour
  • 170.00 gm desiccated coconut
  • 97.50 gm shredded coconut
  • 165.00 gm strawberry jam
Instructions:
  • Preheat the oven to 150°C/130°C fan-forced and line 3 large baking trays with baking paper. Use an electric mixer to beat egg whites until soft peaks form. Gradually add sugar, one tablespoon at a time, beating until fully dissolved. Mix in the vanilla extract until well combined.
  • Gently mix in flour and coconut with the meringue until just combined. Using a spoon, place level tablespoons of the mixture onto prepared trays, spacing them 3cm apart. Create a small shallow indentation in the center of each macaroon and fill it with 1/2 teaspoon of jam.
  • Bake one tray at a time for 35 to 40 minutes until just firm (refer to note). Let them sit on the trays for 5 minutes before transferring them onto a wire rack lined with baking paper to cool. Serve.
