Try this vibrant berry-infused swordfish steak made with nonalcoholic margarita mix for a refreshing seafood dinner option.
Ingredients:
  • 1/2 cup nonalcoholic margarita mix
  • 3 tablespoons lime juice
  • 1 clove garlic, crushed
  • 1 1/2 pounds swordfish, tuna or marlin steaks, 3/4 to 1 inch thick
  • 1/2 teaspoon coarse salt
  • 3 cups strawberry halves
  • 1/2 cup coarsely broken fat-free pretzels
Instructions:
  • Combine margarita mix, lime juice, and garlic in a shallow glass or plastic dish. Place fish steaks in the mixture, ensuring they are evenly coated. Cover and refrigerate for at least 1 hour, but not more than 24 hours.
  • Preheat broil setting on oven. Take fish out of marinade and keep marinade aside. Put fish on broiler pan rack. Brush fish with marinade and sprinkle with 1/4 teaspoon salt. Broil fish about 4 inches from heat for 5 minutes.
  • Turn the fish delicately. Brush it with the remaining marinade and sprinkle with the remaining 1/4 teaspoon of salt. Broil for an additional 4 to 6 minutes or until the fish easily flakes with a fork. Combine strawberries and pretzels, then serve over the fish.
