Strawberry tart with sweetened berries on creamy mascarpone, finished with balsamic glaze.
Ingredients:
  • Tart Shell
  • 1 recipe pie dough (see Pâte Brisée recipe , increase sugar to 1 1/2 teaspoons)
  • OR
  • 1 sheet of puff pastry, thawed
  • 1 egg, whisked
  • Filling and Glaze
  • 2 lbs strawberries, stemmed and quartered
  • 1/2 cup granulated sugar
  • 1 Tbsp orange zest, divided
  • 1 teaspoon lemon juice
  • 12 ounces mascarpone cheese (can also use 8 ounces mascarpone mixed in with 4 ounces of ricotta or 4 ounces of whipped cream)
  • 1/2 teaspoon vanilla
  • 1/3 cup confectioner's sugar (powdered sugar)
  • 1 Tbsp balsamic vinegar (substitute a teaspoon of lemon juice if you don't have balsamic)
Instructions:
  • Combine fresh, ripe strawberries with half of the fragrant orange zest and a sprinkle of granulated sugar in a large bowl. Toss gently until the strawberries are evenly coated and allow them to sit and macerate for 30 minutes.
  • Prepare mascarpone base by combining mascarpone cheese, confectioner's sugar, remaining orange zest, lemon juice, and vanilla in a medium bowl. Chill until ready to use.
  • Once the strawberries have macerated for 30 minutes, strain the liquid from the strawberry mixture through a sieve into a bowl. Transfer the strawberry liquid to a small saucepan, add a tablespoon of balsamic vinegar, and simmer over medium-high heat until it thickens into a syrupy consistency. Remove from heat and let it cool.
  • Create the tart: Smooth mascarpone mixture onto tart shell, layer with strawberries, and delicately coat with balsamic glaze using a pastry brush.
