Introducing a delicious fruit bread vying for the top spot against banana bread.
Ingredients:
  • 1 bag (16 oz) frozen whole strawberries, thawed, drained
  • 2 cups sugar
  • 1 1/4 cups vegetable oil
  • 4 eggs
  • 3 cups Gold Medal™ all-purpose flour
  • 3 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped nuts
Instructions:
  • Preheat the oven to 350°F. Grease only the bottoms of two 9x5- or 8x4-inch loaf pans with shortening and lightly dust with flour.
  • Gently crush strawberries and set them aside. In a large bowl, combine sugar and oil. Mix in eggs until well incorporated. Fold in strawberries until fully combined. Gently incorporate all remaining ingredients except nuts until just moistened, then stir in nuts. Transfer mixture to pans.
  • Bake for 1-1 hour 10 minutes or until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then gently remove the loaves from the pans onto a wire rack. Allow the loaves to completely cool for about 2 hours before slicing. To store, wrap tightly and keep at room temperature for up to 4 days or refrigerate for up to 10 days.
