Strawberry Oat Muffins

Ingredients:
  • 1 cup rolled oats
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon salt
  • 1 egg
  • 0.75 cup brown sugar
  • 1 teaspoon vanilla
  • 1 cup chopped fresh strawberries
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a muffin pan by greasing and flouring it, or using paper liners. In a small bowl, mix oats and buttermilk together and let it sit for 5 minutes. In a separate medium bowl, combine flour, baking powder, baking soda, and salt; set aside.
  • Combine the egg, oil, brown sugar, and vanilla in a large bowl, then mix in the oats. Gently stir in the flour mixture until just moistened, then fold in the strawberries. Fill muffin cups 2/3 to 3/4 full.
  • Bake in the oven until a toothpick inserted into the center comes out clean, about 15 to 20 minutes.
