Make fresh strawberry baked oatmeal bars for a healthier twist on a classic treat by Chef John.
Ingredients:
  • 0.25 teaspoon ground ginger
  • 1 pound fresh strawberries
  • 0.5 lemon, juiced
  • 2 tablespoons white sugar
  • 2 teaspoons cornstarch
  • 1.5 cups old-fashioned rolled oats
  • 0.5 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 0.5 cup packed light brown sugar
  • 0.5 teaspoon kosher salt
  • 8 tablespoons unsalted butter, melted
Instructions:
  • Preheat the oven to 375°F (190°C) and generously butter a 9x12-inch baking dish.
  • Trim off the green tops of the strawberries using a small, sharp knife or a strawberry huller. Place the berries cut-side down on a work surface and halve them. Slice each half lengthwise 3 to 5 times, then dice them evenly by slicing across.
  • Mix diced strawberries, fresh lemon juice, sugar, and cornstarch in a bowl until well incorporated and the cornstarch is fully blended. Let it sit for later use.
  • In a mixing bowl, blend oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ginger. Mix in melted butter until all dry ingredients are evenly coated.
  • Spread 60% of the oatmeal mixture evenly in the baking dish and gently press down with a spoon to compact.
  • Arrange strawberries gracefully using a slotted spoon, being careful not to press down. Keep any delicious juices in the bowl. Sprinkle on the remaining oatmeal mixture and gently press down with the back of a spoon or spatula. Finally, drizzle the reserved juices on top for added flavor.
  • Bake in the hot oven until the top turns a golden brown, approximately 45 minutes. Gently press down the top with a spatula to slightly compact. Allow it to cool fully, around 1 hour. Cut into bars and enjoy.
