Delicious strawberry bread with juicy berries, oats, whole wheat flour, and yogurt for a wholesome breakfast or snack.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 cups whole wheat flour
  • 1.5 cups rolled oats
  • 1 cup white sugar
  • 1 cup brown sugar
  • 0.25 cup flax seeds
  • 1 tablespoon ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 0.5 cup plain yogurt
  • 1.25 pounds sliced fresh strawberries
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease 2 loaf pans with oil.
  • Combine the all-purpose flour, whole wheat flour, oats, white sugar, brown sugar, flax seeds, cinnamon, baking powder, and salt in a large mixing bowl, stirring until well combined.
  • In a smaller bowl, gently whisk together oil, eggs, and yogurt. Add this mixture to the flour mixture, stirring just until combined. Use your hands if the batter is very thick. Gently fold in the strawberries, then pour the batter into the prepared loaf pans.
  • Bake in the oven set to the perfect temperature until a toothpick comes out clean when inserted into the center, about 50 to 60 minutes. Then, cool on a wire rack.
