Whip up irresistible strawberry scones using fresh seasonal berries.
Ingredients:
  • 450.00 gm self-raising flour
  • 10.00 gm caster sugar
  • Pinch of salt
  • 60g butter, chilled, chopped
  • 321.88 gm milk
  • 250g strawberries, hulled, diced
  • Extra milk, for brushing
  • Double cream, to serve
  • Strawberry jam, to serve
  • Diced strawberries, to serve
Instructions:
  • Preheat the oven to 220C/200C fan-forced. Then, lightly grease and dust a large baking tray.
  • In a large bowl, combine flour, sugar, and salt. Incorporate the butter by rubbing it into the flour mixture until it resembles breadcrumbs. Gently mix in the milk and half of the strawberries until a soft dough forms. Transfer the dough onto a lightly floured surface and knead briefly until smooth.
  • Shape the dough into a 2cm-thick round and use a 5cm-round cutter to cut out scones without twisting the cutter. Combine leftover dough pieces. Make a total of 24 scones and arrange them closely on a baking tray. Lightly brush the tops with extra milk before baking.
  • Bake until golden, about 15 minutes. Serve alongside cream, jam, and any leftover strawberries.
