Jam and cream heart scones

Create a romantic treat for Valentine's Day with these fluffy scones.
Ingredients:
  • 300g (2 cups) self-raising flour
  • 20.00 gm caster sugar
  • 40g chilled butter, chopped
  • 160ml (2/3 cup) milk
  • 20.60 gm milk, extra, to brush
  • Strawberry jam, to serve
  • 250ml (1 cup) thickened cream, whipped
Instructions:
  • Preheat your oven to 200°C and prepare a large baking tray with non-stick baking paper.
  • Sift the flour into a large bowl, then stir in the sugar. Add the butter and rub it into the flour mixture using your fingertips until it resembles fine breadcrumbs.
  • Create a crater in the middle. Add the milk. Use a round-bladed knife to cut and mix until the mixture begins to form a dough.
  • Transfer the dough to a floured surface and roll it out into a 1.5cm thick disc using a floured rolling pin. Cut out 8 heart shapes using a 6cm cutter dusted with flour and place them on a lined tray. Re-roll the dough scraps and repeat the process to make 4 more scones before transferring them to the same tray.
  • Brush the tops of the scones with a little extra milk. Bake for 12-15 minutes until they turn golden and sound hollow when tapped. Let them cool on a wire rack, then slice in half and spread one half of each scone with jam and cream. Place the remaining half of each scone on top, cut-side down.
