Indulge in a decadent jam and cream omelette for a sweet breakfast delight.
Ingredients:
  • 4 eggs, separated
  • 20.00 gm caster sugar
  • 40.40 gm thick cream, plus extra to serve
  • 25g unsalted butter
  • 79.20 gm strawberry jam
  • 24.00 gm icing sugar, to dust
Instructions:
  • Heat up the grill until it’s nice and hot.
  • Whisk egg yolks, sugar, and cream until pale in one bowl. In another bowl, beat egg whites until soft peaks form. Carefully fold egg whites into the yolk mixture.
  • In a 20cm frying pan, melt the butter until it foams, then pour in the egg mixture. Cook over low heat for 1-2 minutes until the base is set and pulls away from the sides.
  • Position 10cm away from the grill and cook until just set, for 2-3 minutes.
  • Heat the jam in a pan over gentle heat, spoon it onto the omelette, fold, sprinkle with icing sugar, slice, and serve with extra cream on the side.
