Chocolate and mixed berry souffle omelette

Berry and chocolate filled dessert, a delightful combination of souffle and omelette.
Ingredients:
  • 1 egg yolk
  • 2.20 gm vanilla essence
  • 20g dark chocolate, finely grated
  • 125.00 ml fresh berries or thawed frozen berries
  • 13.20 gm berry jam
  • 2 egg whites, at room temperature
  • 30.00 gm caster sugar
  • 5g butter
Instructions:
  • Mix together egg yolk, sugar, vanilla, and chocolate until well combined. In a pan, add berries and jam. Cook over medium heat for 1 minute, stirring gently.
  • Whip egg whites with electric beaters until frothy, then gradually add sugar until peaks form. Gently mix 1/4 of the egg whites into the chocolate mixture before folding in the rest.
  • In a small (16cm base) non-stick frying pan over medium heat, melt butter. Spoon in chocolate mixture. Cook for 3 mins. Place under a preheated medium-high grill for 1 min or until set.
  • Spread the vibrant berry mixture over one side of the luscious omelette. Gently fold the omelette in half, creating a delightful pocket of fruity goodness. Finish with a sprinkle of powdered sugar for a touch of sweetness. Enjoy this irresistible dish right away.
