Berry and orange souffle omelette combines fluffy souffle with a burst of berries and citrus.
Ingredients:
  • 120g mixed fresh berries or thawed frozen berries (like raspberries, strawberries, blackberries and/or boysenberries)
  • 26.40 gm berry jam
  • 2 eggs, separated
  • 40.00 gm caster sugar
  • 4.40 gm vanilla essence
  • 10g (2 tsp) butter
  • Icing sugar, to dust
Instructions:
  • In a 20cm omelette pan or non-stick frying pan, cook the berries and jam over medium heat for 2-3 minutes until the jam melts and the berries are heated through. Remove from the pan and set aside. Clean the pan with paper towel.
  • Preheat grill on high. In a medium mixing bowl, whisk together egg yolks, 1 tablespoon caster sugar, orange rind, and vanilla essence until thick and pale. In a separate medium mixing bowl, whisk egg whites and remaining caster sugar until soft peaks form. Gently fold egg whites into the egg yolk mixture until just combined.
  • In a hot omelette pan, melt the butter until it sizzles. Lower the heat, pour in the omelette mixture, spread it evenly, and cook until golden and almost set, about 5 minutes.
  • Transfer the pan from the stovetop to the preheated grill for 1-1 1/2 minutes until it's golden brown on top and firm to the touch.
  • Place the berry mixture down the center of the omelette. Fold 1/3 of the omelette over the filling with a fork or spatula. Slide the omelette onto a warmed plate, folding the opposite side under to enclose the filling. Cut the omelette in half and serve dusted with icing sugar.
