"Berry-filled souffle omelette - a sweet brunch treat!"
Ingredients:
  • 100g caster sugar
  • 4 eggs, separated
  • 80ml grand marnier
  • 60.00 ml mixed berry compote
  • Vanilla ice cream, to serve
  • Icing sugar, to serve
Instructions:
  • - Preheat oven to 180°C. - Whisk caster sugar with egg yolks until thick and pale. Mix in Grand Marnier. - In a separate bowl, whisk egg whites with remaining caster sugar until stiff peaks form. Gently fold whites into the yolk mixture. - Brush a 20cm ovenproof non-stick frypan with melted butter and heat over medium heat. - Pour half of the egg mixture into the pan and cook for 1 minute on the stovetop. Transfer to the oven and bake for 2 minutes until puffed and golden. - Spoon berry compote over half of the omelette, then fold over onto a warmed plate. Repeat for the second omelette. - Dust with icing sugar and decorate with criss-cross lines using a red-hot skewer if desired. Serve with vanilla ice cream.
