Souffle omelette with vanilla apricots

Impressive individual dessert, soufflé-inspired without the hassle.
Ingredients:
  • 2 apricots
  • 1 tablespoon orange-blossom honey
  • 1 large free-range egg
  • ½ tablespoon vanilla sugar
  • ½ tablespoon butter
  • icing sugar
  • ½ tablespoon hazelnuts
Instructions:
  • Cut the apricots in half and combine them with honey and 2 tablespoons of water in a saucepan. Cook covered until tender yet firm. Preheat the grill. Separate the egg yolk and white. Mix vanilla sugar and 2 tablespoons of water with the yolks until thick. Beat the egg whites until stiff, then gently fold into the yolk mixture. Melt butter in a 20cm omelette pan. Pour in the egg mixture and cook until golden brown and firm underneath. Grill until the top is cooked. Loosen the omelette with a spatula, create an indentation in the middle, and spoon the apricots inside. Fold the omelette in half, transfer to a plate, sprinkle with icing sugar, hazelnuts, and serve hot.
