Elevate your omelette to a heavenly souffle for a taste of French luxury.
Ingredients:
  • 8 eggs, separated
  • 125.00 ml fresh mixed herbs, chopped (parsley, chives, chervil, tarragon)
  • 125.00 ml cheddar cheese, grated
  • 4 green onions, sliced
  • 15g butter, chopped
  • Fresh chervil sprigs, extra, to serve
Instructions:
  • Combine egg yolks with a mixture of fresh herbs, grated cheese, and diced onions in a spacious bowl, and whisk together until well blended.
  • Beat egg whites in a clean bowl until soft peaks form, then gently fold them into the egg yolk mixture.
  • Melt a knob of butter in a 20cm frying pan over high heat, swirling to coat the base. Pour 1/4 of the omelette mixture into the pan and cook for 2-3 minutes until it starts to set. Finish cooking by placing it under a hot grill.
  • Gently fold the omelette and transfer it to a serving plate. Garnish with fresh chervil sprigs. Repeat with the rest of the mixture and butter.
