Strawberry Sheet Cake

Delicious strawberry sheet cake using cake mix and fresh strawberry puree in both the cake and frosting.
Ingredients:
  • 1 (16 ounce) package fresh strawberries
  • 1 (15.25 ounce) package white cake mix
  • 3 large eggs
  • 0.75 cup oil
  • 1 (3 ounce) package strawberry-flavored gelatin (such as Jell-O®)
  • 0.25 cup butter, softened
  • 1 (4 ounce) package cream cheese, softened
  • 2.5 cups powdered sugar, or more as needed
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry puree
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 9x13-inch sheet pan.
  • Clean and remove stems from strawberries. Blend the strawberries until smooth. Reserve 1 3/4 cups of the strawberry puree, and set aside 1/2 cup for the frosting.
  • In a bowl, mix cake mix, 1 1/4 cups strawberry puree, eggs, oil, and gelatin until fully blended using an electric mixer. Spread the batter evenly in the sheet pan.
  • Bake in the preheated oven for 35 to 45 minutes until a toothpick inserted into the center comes out clean. Cool completely on a wire rack before adding the Strawberry Frosting.
  • In a bowl, mix butter and cream cheese until smooth using an electric mixer. Stir in 1/2 cup strawberry puree, powdered sugar, and vanilla extract until frosting is velvety.
  • Top the chilled cake with luscious strawberry frosting and store in the refrigerator until ready to enjoy.
