Strawberry vanilla cordial

Ingredients:
  • 125ml (1/2 cup) water
  • 100g (1/2 cup) caster sugar
  • 1 vanilla bean, split lengthways
  • 1 x 250g punnet strawberries, washed, hulled
  • Chilled sparkling white wine, to serve
Instructions:
  • In a saucepan, gently melt the sugar in water over low heat for 2 minutes until dissolved. Stir in the vanilla bean, then raise the heat to medium-high until boiling. Let it simmer without stirring for 2 minutes until the syrup slightly thickens. Pour into a jug and let it cool for 10 minutes.
  • In the meantime, blitz the strawberries in a food processor until smooth. Discard the vanilla pod from the syrup and mix in the strawberry puree.
  • Pass the syrup through a fine sieve into a jug, discarding the seeds. Transfer the strained syrup into a clean, sealable bottle.
  • Pour 1 1/2 tablespoons of cordial into each glass and top with sparkling wine. The sugar will create a delightful fizz. Serve promptly.
