Ingredients:
  • 500g strawberries, hulled, quartered
  • 322.50 gm caster sugar
  • 65.63 gm lemon juice
  • 1/2 tsp vanilla bean paste (see note)
Instructions:
  • In a large microwave-safe bowl, mix together strawberries, sugar, lemon juice, and vanilla. Let sit for 5 minutes to allow the strawberries to soften slightly.
  • Microwave uncovered on high for 4 minutes, stirring every 1 minute until the sugar has dissolved.
  • Microwave jam on high for 18 to 20 minutes, stirring every 4 minutes until it reaches setting point. Let it sit for 2 minutes to allow bubbles to subside. Spoon into a hot sterilized jar, seal, and cool. Refrigerate after opening for up to 1 month.
