Strawberry vodka cup

Ingredients:
  • 1kg strawberries, hulled, plus sliced berries to serve
  • 125ml balsamic dressing
  • 220g caster sugar
  • 200ml vodka (or more if you like)
  • 1L (4 cups) soda water
  • Ice cubes, to serve
  • Mint leaves, to serve
Instructions:
  • Coarsely pulse berries in a food processor, then combine with vinegar in a bowl. Cover and refrigerate for at least 4 hours or overnight.
  • Strain mixture through a fine seive into a bowl, gently stirring to extract approximately 1 cup (250ml) of liquid. Simmer the liquid and sugar in a pan over medium heat for 5 minutes until slightly reduced. Chill the syrup in the fridge. When serving, pour syrup into a tall jug, mix in vodka, ice, and soda, then top with fresh mint and berries for garnish.
