Delicious homemade strawberry yogurt popsicles - perfect for a refreshing and healthy summer treat!
Ingredients:
  • For the simple syrup:
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • For the popsicles:
  • 1 pound (4 cups) strawberries, hulled and halved
  • 1 tablespoon lemon juice
  • 1 cup plain or vanilla yogurt
Instructions:
  • Prepare the simple syrup: Combine sugar and water in a small saucepan over medium heat. Boil and stir until sugar dissolves. Cool in the refrigerator or by placing the pot in a bowl of ice. This recipe yields approximately 3/4 cup of syrup; any remaining can be refrigerated for up to several weeks.
  • Blend together the strawberries, lemon juice, and 3 tablespoons of simple syrup in a food processor until smooth. Adjust sweetness with more simple syrup if desired. Transfer the puree to a measuring cup or bowl.
  • Smooth out any lumps in the yogurt by whisking it in a bowl. For a sweeter taste, add honey or simple syrup to your liking.
  • Layer the popsicle molds: Alternate filling the molds with 1 tablespoon of fruit puree and 1 tablespoon of yogurt until they are filled to within 1/4-inch from the top for expansion. Use a skewer or chopstick to swirl the yogurt and fruit together. Note: Adjust amounts based on mold size. Any extra strawberry puree can be refrigerated for up to 5 days, frozen for up to 3 months, or mixed into yogurt for later use.
  • Chill the popsicles: Freeze for 1 hour. Insert popsicle sticks, leaving 2 inches above the mold. Freeze for 3 to 4 more hours until solid.
  • Prepare popsicles for serving or storage: Quickly dip the bottom and sides of the mold in a container of hot water, ensuring not to submerge completely. Hold briefly to allow popsicles to thaw slightly and release from the mold. Enjoy immediately, or place in freezer bags and store in the freezer. Each quart-sized freezer bag can snugly hold three popsicles. For easier consumption, let them sit out for a few minutes before indulging, if you can resist the temptation.
