Golden fritters with bananas and strawberries, a sweet and delightful family recipe perfect for breakfast or brunch.
Ingredients:
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 2 eggs
  • 0.33333334326744 cup confectioners' sugar
  • 1 cup milk
  • 1 teaspoon vegetable oil
  • 1 teaspoon vanilla extract
  • 2 bananas, chopped
  • 0.5 cup chopped strawberries
  • 0.25 cup vegetable oil for frying
Instructions:
  • Combine flour, baking powder, cinnamon, and salt by sifting them together in a bowl.
  • In a large bowl, gently combine whisked eggs and confectioners' sugar. Mix in milk, 1 teaspoon of oil, and vanilla extract until well combined. Gradually add the flour mixture, stirring until just combined. Carefully fold in the bananas and strawberries into the batter.
  • In a large nonstick skillet over medium heat, warm 1/4 cup of oil. Spoon 1/4 cup of batter into the oil and fry fritters until they turn light golden brown, about 2 to 3 minutes per side. Place them on paper towels to drain.
