Elevate classic banana bread with fresh strawberry slices.
Ingredients:
  • 1/2 cup unsalted butter
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 1/2 cups mashed very ripe bananas (about 3 medium)
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 2 1/2 cups Gold Medal™ all-purpose unbleached flour
  • 1 teaspoon baking soda
  • 1 cup sliced strawberries
Instructions:
  • Preheat your oven to 350°F and generously grease the bottom of a 9x5-inch loaf pan.
  • Heat butter in a 1-quart saucepan over medium heat until golden brown, stirring occasionally. Strain into a small bowl to remove blackened bits.
  • In a large bowl, use an electric mixer to beat together butter and sugar for 2 minutes on medium speed. Add eggs and stir until combined.
  • Combine bananas, buttermilk, and vanilla, stirring until smooth. Mix in flour, baking soda, and salt until just combined. Gently fold in strawberries, then transfer the batter to the pan.
  • Bake for 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean. If the top is browning too quickly, loosely cover with foil.
  • Allow the dish to cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.
