Ingredients:
  • 4 mandarins, peeled, segmented
  • 3 bananas
  • 250g punnet strawberries, hulled
  • 50g butter
  • 32.00 gm brown sugar
  • 20.00 ml Malibu
  • 250ml milk
  • 3 whole star anise or 1 cinnamon stick
  • 3 egg yolks
  • 40.00 gm caster sugar
Instructions:
  • In a medium saucepan, gently warm the milk and star anise. Be careful not to boil. In a heatproof bowl, whisk together the egg yolks and sugar until combined. Gradually pour in the warm milk while whisking continuously. Transfer the mixture back to the saucepan and cook over low heat until it thickens enough to coat the back of a spoon. Remove from heat.
  • Peel the bananas and cut them diagonally into slices. Remove the white membrane from the mandarin segments and slice the strawberries.
  • In a large frying pan over medium heat, melt the butter. Sprinkle in the sugar and stir until dissolved. Add the mandarins, bananas, and strawberries. Cook for 2 minutes, making sure to coat the fruit evenly in the mixture.
  • Turn up the heat to high and pour in the Malibu. Stir and cook for 2 minutes, making sure to turn the fruit frequently, until the sauce thickens and coats the fruit. Spoon the fruit into serving dishes and enjoy with the custard. Feel free to try with different fruits like pineapple or pear.
