Strawberry-Cream Cheese Pie

Indulge in a luscious strawberry cream cheese pie with a sweet sauce.
Ingredients:
  • 0.5 cup powdered sugar
  • 0.75 teaspoon vanilla extract
  • 1 (9 inch) baked pie crust
  • 1 quart fresh strawberries, hulled and halved
  • 3 tablespoons cornstarch
  • 0.5 cup water
Instructions:
  • Cream the cream cheese with an electric mixer until smooth. Gradually add powdered sugar, beating gently until blended. Stir in vanilla.
  • Smooth the luscious cream cheese mixture onto the pie crust. Chill until perfectly set, for 15 to 30 minutes.
  • In a blender, gently blend together 3/4 cup of strawberries, sugar, water, and cornstarch. Set aside the remaining strawberries.
  • Place the blended strawberry mixture into a saucepan over medium heat. Stir continuously until it comes to a boil. Let it boil for 2 more minutes until thickened. Remove from heat and stir occasionally as it cools for about 3 minutes.
  • Take the chilled pie out of the refrigerator. Place the reserved strawberries on top of the cream cheese layer. Drizzle the thickened sauce over the pie. Chill in the refrigerator for a minimum of 2 hours before serving.
