Creamy almond cream cheese pie with chopped almonds, vanilla, and confectioners' sugar. Topped with whipped cream, fresh strawberries, and currant jelly glaze. Delicious and refreshing dessert!
Ingredients:
  • 1.3333200216293 cups all-purpose flour
  • 4 tablespoons shortening
  • 3 tablespoons cold water
  • 0.75 cup confectioners' sugar
  • 1 cup heavy whipping cream, whipped
  • 0.5 teaspoon almond extract
  • 0.25 cup chopped almonds
  • 4 cups fresh strawberries, halved
  • 0.25 cup currant jelly
Instructions:
  • In a medium bowl, mix flour and salt together. Add shortening and butter, blending until pea-sized crumbs form. Gradually sprinkle in water, one tablespoon at a time. Gently toss with a fork until a dough ball forms. Chill dough for 15 to 30 minutes before using.
  • Flatten dough between wax paper into an 11-inch circle, then place it into a 9-inch pie pan. Use a fork to prick the bottom and sides of the dough well to prevent shrinking.
  • Preheat oven to 425°F (220°C). Bake until lightly browned, about 10-15 minutes. Let cool to room temperature.
  • In a medium bowl, blend cream cheese and confectioner's sugar until smooth using an electric mixer. Add vanilla and almond extracts, then fold in whipped cream and almonds until well combined. Pour the mixture into the cooled crust and refrigerate until set.
  • Arrange strawberries fully on top of the pie for a beautiful presentation. Warm jelly in the microwave until just soft, then gently brush it over the strawberries for a shiny glaze. Chill in the refrigerator until ready to serve.
