Tropical fruit pie with a salty pretzel crust, inspired by frozen margaritas.
Ingredients:
  • 1 1/4 cups crushed pretzels
  • 1/4 cup sugar
  • 1/2 cup butter or margarine, melted
  • 1 pint mango sorbet, softened slightly
  • 2 boxes (10 oz each) frozen strawberries in syrup, thawed
  • 1/2 cup frozen (thawed) margarita mix concentrate
  • 1 cup whipping cream, whipped
  • 10 fresh strawberry halves
  • 1 small ripe mango, cut into cubes
  • Coarse sugar, if desired
  • Fresh strawberry slices, if desired
Instructions:
  • In a small bowl, combine the crust ingredients until well mixed. Press the mixture firmly into the bottom of an ungreased 9- or 8-inch springform pan and refrigerate for 10 minutes.
  • Cover the crust with a generous layer of sorbet, then use a metal spatula to spread it evenly. Place in the freezer for 30 minutes to set.
  • In a large bowl, gently mash the thawed strawberries with a wire whisk until broken into small pieces. Stir in margarita mix until fully combined. Gently fold in whipped cream. Pour the mixture into a pan over the sorbet and freeze for at least 3 hours until firm.
  • Thread strawberry halves and mango slices onto 4-inch wooden skewers, sprinkle with coarse sugar, and insert into the top of the dessert for a beautiful garnish. When serving, slice into wedges.
