Indulgent mascarpone gelato with fresh strawberries, perfect for easy entertaining.
Ingredients:
  • 3 cups strawberries, hulled and quartered
  • 1 (8 ounce) container mascarpone cheese
  • 1 cup whole milk
  • 0.75 cup white sugar
  • 1 tablespoon lemon juice
  • 0.125 teaspoon salt
Instructions:
  • Blend strawberries until silky smooth, then strain the puree through a fine-mesh sieve into a large bowl. Use a rubber spatula or wooden spoon to press out all the flavorful juices, discarding any solids.
  • In a blender or food processor, blend mascarpone cheese, milk, sugar, lemon juice, and salt until velvety smooth. Stir the mixture into the strawberry puree until fully incorporated. Chill covered in the refrigerator for at least 3 hours or overnight before serving.
  • Pour the chilled mixture into an ice cream maker and churn per the manufacturer's directions for approximately 20 minutes. Then, move the ice cream to a sealed container and freeze until it reaches a firm consistency, which may take anywhere from 2 hours to overnight.
  • Allow the gelato to gently soften at room temperature for 10-15 minutes before enjoying.
