Cool off with a refreshing, low-fat strawberry-rhubarb slush spiked with vodka. Perfect for sipping one glass at a time or serving as a crowd-pleasing party punch.
Ingredients:
  • 1 bag (16 ounces) frozen rhubarb or 3 cups chopped fresh rhubarb
  • 1 cup sugar
  • 2 packages (10 ounces each) frozen sweetened strawberries, slightly thawed
  • 1 1/2 cups vodka
  • 1 can (12 ounces) lemon-lime carbonated beverage
  • 1 bottle (2 liters) lemon-lime carbonated beverage, chilled
  • Sliced fresh strawberries, if desired
Instructions:
  • In a 3-quart saucepan, bring the rhubarb and sugar to a boil over medium heat, stirring occasionally. Simmer for 8 to 10 minutes until the rhubarb is very tender. Then, add in the strawberries.
  • Transfer half of the luscious strawberry mixture into a blender. Blitz on high speed until gloriously smooth. Transfer the blend into a spacious nonmetal container. Repeat blending with the remaining flavorful strawberry mixture and combine in the container. Gently fold in the vodka and a 12-ounce can of fizzy drink. Freeze for a minimum of 8 hours until transformed into a heavenly slushy treat.
  • Combine 1/2 cup frozen mixture and 1/2 cup chilled carbonated beverage in a tall glass, stir until slushy, and top with strawberry slices for a refreshing treat!
