Crispy golden corn tortillas filled with savory roast beef hash, peppers, onions, and melted cheese.
Ingredients:
  • 1.5 teaspoons olive oil
  • 0.25 cup chopped onion
  • 0.5 red bell pepper, finely chopped
  • 0.25 cup frozen corn kernels, thawed
  • 1 serrano chile pepper, seeded and diced
  • 1 (15 ounce) can HORMEL® Mary Kitchen® Roast Beef Hash
  • 1 canned chipotle chile in adobo sauce, minced, or more to taste
  • 3 tablespoons vegetable oil for frying, or as needed
  • 8 corn tortillas
  • 1 cup shredded mozzarella cheese
  • 0.25 cup chopped fresh cilantro
  • 1 cup salsa
  • 0.5 cup sour cream
Instructions:
  • In a skillet over medium heat, heat olive oil. Sauté onions and red bell pepper until starting to soften, around 3 minutes. Mix in corn and serrano pepper; cook for 2 to 3 minutes. Stir in garlic and cook for an additional minute.
  • Lower the heat to medium-low, then stir in HORMEL® MARY KITCHEN® Roast Beef Hash and chipotle pepper. Cook until the hash is heated through and evenly combined, about 2-3 minutes.
  • Warm the tortillas in a skillet, flipping once, until they are pliable and foldable without cracking.
  • Warm up the vegetable oil in a skillet over medium heat.
  • Spread 2 tablespoons of the hash filling and 1 1/2 tablespoons of mozzarella cheese on each tortilla. Fold tortillas in half, then fry in vegetable oil until golden and crispy, around 3 minutes per side. Drain on a paper towel-lined plate.
  • Combine fresh cilantro and finely chopped onions in a small bowl.
  • Garnish the quesadillas with salsa, sour cream, onions, and cilantro. Bon appétit!
