Whip up a quick and scrumptious Chex® cereal fruit cake for the family in just one hour!
Ingredients:
  • 2 cups Wheat Chex™ cereal
  • 1 1/2 cups orange juice
  • 1/4 cup canola oil
  • 1 egg, slightly beaten
  • 2 small bananas, thinly sliced
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 3/4 cup granulated sugar
  • 1/2 cup raisins, if desired
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 cup Wheat Chex™ cereal
  • 1/2 cup chopped nuts, if desired
  • 1/3 cup packed brown sugar
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter or margarine, softened
  • 1/2 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 350°F. Grease a 9-inch square pan with shortening or cooking spray. In a large bowl, combine 2 cups cereal and orange juice; allow it to sit for about 2 minutes until the cereal softens.
  • Combine the oil, egg, and bananas with the cereal mixture, then fold in the rest of the cake ingredients. Spread the batter evenly in the pan.
  • Bake for 35 to 40 minutes, or until the center springs back lightly when touched. While it bakes, crush 1/2 cup cereal in a plastic bag or between waxed paper sheets with a rolling pin. Combine crushed cereal with the remaining topping ingredients in a small bowl until crumbly.
  • Once the cake is fully baked, switch the oven setting to broil. Sprinkle the topping evenly over the warm cake. Broil with the top about 5 inches away from the heat source for 1 to 2 minutes, or until the topping is bubbly (keep a close eye to prevent burning).
