Italian honey-glazed doughnut towers with colorful sprinkles - Struffoli.
Ingredients:
  • 4 eggs
  • 0.25 cup white sugar
  • 0.25 cup vegetable oil
  • 1 teaspoon baking powder
  • 0.25 cup all-purpose flour, or as needed
  • 2 cups vegetable oil for frying, or as needed
  • 0.5 cup honey, or more to taste
  • 0.5 cup white sugar, or more to taste
  • 1 tablespoon rainbow nonpareil sprinkles, or to taste
Instructions:
  • In a bowl, whisk together eggs, 1/4 cup white sugar, 1/4 cup vegetable oil, and vanilla extract until smooth. Mix in baking powder. Gradually incorporate flour into the egg mixture to form a soft dough. Shape dough into small balls.
  • In a large saucepan, heat 2 cups of vegetable oil until it reaches 350 degrees F (175 degrees C) or until you see gentle waves forming at the bottom.
  • Fry small batches of dough balls in hot oil until lightly browned, about 2 to 3 minutes per batch. Remove struffoli to a paper towel-lined plate with a slotted spoon.
  • In a saucepan over medium-low heat, warm the honey until it starts to bubble. Gradually add 1/2 cup of sugar, a few tablespoons at a time, stirring until the sugar melts completely and the glaze turns smooth, which should take around 5 minutes.
  • Place the struffoli in a large bowl and drizzle the glaze on top. Toss swiftly to fully coat the struffoli before the glaze sets.
  • Create a stunning tower or Christmas tree shape with the struffoli on a serving plate. Gently shower nonpareil sprinkles over the top.
