Family-favorite Easter honey balls: messy, delicious tradition!
Ingredients:
  • 2 cups sifted all-purpose flour
  • 3 eggs
  • 1 pinch salt
  • 2 cups vegetable oil
  • 1.25 cups honey
  • 3 tablespoons pine nuts
  • 2 teaspoons confectioners' sugar
Instructions:
  • First, sift the flour to ensure a light and fluffy texture. Create a well in the center of the flour and gently crack the eggs into it. Sprinkle in the salt and knead the ingredients together until a smooth dough forms.
  • Roll out the dough on a lightly floured surface to a 1/4 inch thickness. Cut the dough into 1/2 inch strips, then dice the strips into tiny pieces that are 1/2 inch long.
  • Roll the mixture into filbert-sized balls using the palm of your hands.
  • Preheat oil to 350°F (175°C).
  • Add the balls to the hot oil in small batches of 3. Fry until golden brown, turning them continuously with a wooden spoon. Remove the balls and let them drain.
  • In a saucepan, mix honey and sugar, then simmer over low heat for about 2 minutes, stirring constantly. Gradually add fried dough balls, one cup at a time, and simmer in honey syrup while stirring for 1 minute. Transfer the strufoli to a flat plate to cool. Once they are slightly cool, garnish with pine nuts and confectioners' sugar and shape about 5 into a cluster. This recipe yields servings for about 8 people. Store the strufoli in a cool place to maintain freshness for weeks.
