Delicious air-fryer twice-baked potatoes loaded with bacon, cheese, and onions. Perfect as a savory appetizer or a hearty entrée.
Ingredients:
  • 4 baking potatoes, peeled and halved
  • 3 teaspoons olive oil, divided
  • 0.5 cup Cheddar cheese, divided
  • 0.5 yellow onion, diced fine
  • 2 slices bacon
Instructions:
  • Heat your air fryer to 350°F (175°C).
  • Gently brush potatoes with 1 teaspoon oil before placing them in the air fryer. Cook for 10 minutes. Brush with another teaspoon of oil and continue cooking for another 10 minutes. Finally, coat with the last teaspoon of oil and cook until tender, approximately 10 more minutes.
  • Halve the cooked potatoes and carefully scoop out the insides into a bowl. Add 1/4 cup of Cheddar cheese and mix thoroughly until well combined.
  • Sauté onion and bacon in a skillet over medium-high heat until the bacon is beautifully browned, about 10 minutes, turning occasionally.
  • Combine the onion and bacon with the mashed potatoes. Fill the potato skins with the mixture and sprinkle the remaining Cheddar on top.
  • Place the stuffed potatoes back into the air fryer and cook for about 6 minutes until the cheese is beautifully melted.
