Air fryer prosciutto, vegetable, and feta stuffed chicken breasts with Parmesan bread crumb coating.
Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 0.5 cup diced red onion
  • 0.5 cup diced red bell pepper
  • 0.5 cup diced fresh mushrooms
  • 0.5 cup chopped fresh spinach
  • 1 teaspoon minced garlic
  • 0.5 teaspoon dried Italian seasoning
  • salt and ground black pepper to taste
  • 0.5 cup crumbled feta cheese
  • 4 boneless, skinless chicken breasts
  • 4 slices prosciutto
  • 1 large egg, beaten
  • 0.75 cup grated Parmesan cheese
  • 0.75 cup fine dry bread crumbs
  • avocado oil cooking spray
Instructions:
  • In a skillet over medium heat, sauté onion in olive oil until softened, around 3 minutes. Then add bell pepper and mushrooms and continue cooking until softened, about 3 more minutes.
  • Add spinach and garlic into the pan off the heat. Stir until spinach is slightly wilted. Season with Italian seasoning, salt, and pepper. Allow it to cool for 10 minutes before adding feta cheese, breaking up any large pieces.
  • Prepare chicken: Pat dry and lay on a cutting board. Slice a pocket in each breast by inserting a knife into the thickest part and slicing parallel to the board, leaving a 1-inch border at each end. Be cautious not to slice through the thinnest edge.
  • Preheat the air fryer to 370 degrees F (190 degrees C following manufacturer's recommendation).
  • Lay out prosciutto slices, spoon 2 tablespoons of filling onto each, wrap the prosciutto around to make a bundle. Stuff a bundle into each chicken breast slice, secure with toothpicks.
  • In a shallow bowl, put beaten egg. In another shallow bowl, mix Parmesan cheese, bread crumbs, parsley, salt, and pepper. Dip each stuffed chicken breast in egg, coat with bread crumb mixture, spray with cooking spray, and air fry.
  • Air fry chicken until golden brown on both sides, approximately 15 minutes per side. Ensure internal temperature reaches 165°F (74°C) using an instant-read thermometer.
