Air fryer Mexican chicken: Stuffed with fresh veggies and spices for a delicious, quick weeknight meal.
Ingredients:
  • 4 extra-long toothpicks
  • 4 teaspoons chili powder, divided
  • 4 teaspoons ground cumin, divided
  • 1 skinless, boneless chicken breast
  • 2 teaspoons chipotle flakes
  • 2 teaspoons Mexican oregano
  • 0.5 red bell pepper, sliced into thin strips
  • 0.5 onion, sliced into thin strips
  • 1 fresh jalapeno pepper, sliced into thin strips
  • 2 teaspoons corn oil
  • 0.5 lime, juiced
Instructions:
  • Soak toothpicks in water in a small bowl to prevent burning during cooking.
  • Combine the 2 teaspoons of chili powder and 2 teaspoons of cumin in a shallow dish.
  • Preheat your air fryer to 400 degrees F (200 degrees C) for optimal cooking results.
  • Lay the chicken breast flat and slice it in half horizontally. Tenderize each piece using a kitchen mallet or rolling pin until it's about 1/4-inch thick.
  • Season each chicken breast half evenly with the remaining chili powder, cumin, chipotle flakes, oregano, salt, and pepper. Stuff each breast half with half of the bell pepper, onion, and jalapeño, then roll it up from the tapered end. Secure each roll-up with 2 toothpicks. Repeat with the other chicken breast, spices, and vegetables, securing with remaining toothpicks. Roll each roll-up in the chili-cumin mixture in a shallow dish, drizzling with olive oil until fully coated.
  • Arrange roll-ups in the air fryer basket, ensuring the toothpicks are facing up. Cook for 6 minutes.
  • Flip the roll-ups and cook in the air fryer until the juices run clear and an instant-read thermometer inserted into the center registers at least 165 degrees F (74 degrees C), approximately 5 more minutes.
  • Evenly drizzle fresh lime juice over the roll-ups right before serving to add a burst of citrus flavor.
