Stuffed baby cucumbers

Elevate your snack game with this dazzling dukkah recipe for crispy qukes. Ideal for anytime cravings or hosting guests.
Ingredients:
  • 250g Qukes baby cucumbers
  • 150g spreadable cream cheese
  • 16.50 gm sweet chilli sauce
  • Micro herbs, optional to serve
  • 37.50 gm sesame seeds
  • 2 tsp ground coriander
  • 7.50 gm ground cumin
  • 1/2 tsp freshly ground black pepper
  • 250.00 ml roasted salted macadamia nuts
  • 2.40 gm sea salt flakes
Instructions:
  • Heat sesame seeds in a small non-stick frying pan over medium heat until lightly toasted, shaking pan often, for 3-5 minutes. Add coriander, cumin, and pepper, cook while shaking the pan for another 2 minutes. Transfer to a bowl. Finely chop macadamia nuts, mix with sesame seeds and salt. Allow to cool.
  • Halve the baby cucumbers lengthwise.
  • Combine the cream cheese and chilli sauce until smooth, then generously spread over the cut side of each baby cucumber. Spread 2 tablespoons of dukkah on a plate, and dip the baby cucumbers into the mixture. Finish by sprinkling with micro herbs before serving.
