Create adorable mini Yorkshire puddings with roast beef, horseradish, and a fluffy batter. Perfect for snacking or entertaining!
Ingredients:
  • 5 eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 0.75 cup canola oil
  • 4 ounces cooked roast beef, thinly sliced (may use leftovers or from deli)
  • 0.25 cup prepared horseradish
  • 1 cup canned au jus gravy, heated
Instructions:
  • Combine eggs, milk, flour, and salt in a mixing bowl, whisk vigorously until smooth and shiny. Allow the mixture to rest for 20 minutes.
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • In each muffin cup, add 1 tablespoon of oil and place the pan in the preheated oven while the batter is resting.
  • Gently whisk the batter. Take the pan out of the oven and promptly fill each cup 3/4 full with batter so it sizzles in the hot oil. Add 1 teaspoon roast beef and 1 teaspoon horseradish into the center of each cup.
  • Return the pan to the oven and bake until the Yorkshire puddings are puffed and golden, approximately 12 minutes. Drain them on a paper towel-lined plate and serve hot with prepared au jus.
