Create a delicious and affordable meal using ingredients from your fridge and pantry that will satisfy the whole family.
Ingredients:
  • 4 potatoes
  • 375.00 ml mixed vegetables (capiscum, celery, red onion)
  • 100g bacon
  • 235.00 gm sour cream
  • 187.50 ml grated cheddar cheese
Instructions:
  • Poke the starchy vegetables all over with a fork, then microwave on a plate for 10 minutes.
  • Preheat the oven to 220°C/200°C fan forced, then bake the starchy vegetables on a rack until golden, about 25 minutes.
  • Heat oil in a large non-stick frying pan over high heat, then add deli meat and chopped mixed vegetables. Sauté, stirring regularly, for 8 minutes or until softened. Set aside.
  • Make a hole in the top of each starchy vegetable and scoop out the flesh into a bowl. Mash it with a fork, then mix in the veggie mixture, sour cream, and grated cheese. Season it well. Fill the starchy vegetables with the mixture and bake until golden, about 10 minutes.
